JELLO cheesecake squares

Another Hawaii favorite is the cheese squares from Zippy's! Mmm Mmm delicious! :) happy Here's a recipe I got from my cousin that replicates Zippy's onolicous cheese squares =P~ drooling

Crust:
1 1/2 sticks of butter
1/2 cup brown sugar, packed
1 1/2 cup flour
1 cup chopped nuts (walnuts and macadamia nuts are best)

Filling:
1 small package of lemon Jello
1 cup hot water
3/4 cup sugar
1 (8 oz.) package cream cheese
2 cups of heavy cream (1 pint)

Topping:
1 large package of cherry (or strawberry) Jello
3 cup hot water

Directions:
Preheat oven to 375 degrees. Cream together butter and brown sugar; add flour and nuts.  Press dough into buttered 9 x 13 inch pan. Bake for 10 minutes or until crust is brown.  

Dissolve small package of lemon Jello with 1 cup of hot water. Let cool. Cream together sugar and cream cheese. Whip up 1 small whipping cream, and add to cheese mixture. Add cooled Jello into cheese mixture. Pour on cooled crust and then chill.   

For topping mix large cherry Jello and 3 cups of hot water. Let cool. Pour on top of cheese mixture and chill completely.

  2. years ago my Hawaiian born girlfriend used to make jello cheesecake for me and my sisters and children and gave me the recipe. It was a family favorite. With the passing of time ,we lost both , friend and recipe. Every now and then I would search the internet for a recipe close to Sally's. And finally about 4 years ago , I found your exact same recipe a few days before Christmas and surprised every one for our annual Christmas Eve Pot Luck. It was the star of the show and in the mean time our family has grown to 22. Yesterday , one of my grandsons came home from college for Christmas and the first thing he asked was : " Omi ( German for grandma ) you are going to make jello cheesecake ,right ? "
    So today I want to thank Cathy for resurrecting a holiday favorite for now 4 Generations of my family in remembrance of our friend Sally. Merry Christmas to all, MELE KALIKIMAKA !
